6 Layer Vegan Dip + a second meal


This is a yummy dip that makes for a great snack the first night, then doubles as taco insides for the next night!  We found this recipe from here.  We love this publication and would recommend it.

1 cup vegan sour cream
1/4 cup taco seasoning (if you are gluten free, please be sure to read the ingredients list)
1 1/4 can of refried beans (be sure to get vegetarian)
2 medium avocados
2 cups of chunky salsa
1 cup of shredded greens
1/4 cup of chopped green onions

Mix together the seasoning and sour cream.
Layer in this order:
beans
sour cream mixture
avo
salsa
greens
green onion

If you aren't vegan you can use regular sour cream.  It tastes great either way!
