This week for Breakfast:
Gluten Free Chocolate Chip Muffins (King Arthur Mix)
Gluten Free Waffles with scrambled eggs (Bisquick GF mix)
Lazy Granola and Yogurt (soy and milk based yogurt)
Gluten Free Pancakes with scrambled eggs (Bisquick GF mix)
Gluten Free Breakfast Bars and others for Preschool Veg (they are getting tired of these, I need a new breakfast idea)
For the pancakes and waffles I try to make a double batch and freeze them so I can cut my breakfast making time down! I try to do a breakfast with eggs on 'school' days so that preschool Veg has some extra energy! There are times when breakfast fails or we don't have enough time! Then I use the Giant Breakfast Cookies, that I have stashed in the freezer!
For lunches, we are continuing our "homemade lunchables". The kids lunchables will be filled with homemade applesauce, lots of fresh fruit, gluten free snack items, fresh fruit, gluten free crackers with soy nut butter (honey) and also gluten free PB sammys!
For dinners:
Corn Bread (homemade) and Freezer chili
Veg Tempura - made this already it was a flop. We tried to make GF and the GF flour we used was way too gummy. :(
Six Layer Dip with chips (snack dinner for NYE)
Tacos -using left over six layer dip for insiders and shells from the pantry
Meatless Meatloaf with mashed potatoes (had this already, not bad, I had a bit of texture problem with it)
Bake ziti, Vegan style
Tofu pups and fries
