Mashed Potato Soup



Wonderful 30 minute meal that I adapted from Rachel Ray!

Mashed potatoes:
6 med white potatoes
2 T butter
1/2 c sour cream
1/4 c milk

Soup:
4 cups prepared mashed potatoes
1 c heavy cream
2 can veggie broth
2 scallions
1 c shredded cheddar

In a large pot, cover potatoes with water and boil until tender. Drain potatoes and return to hot pot. Using a potato masher, combine potatoes with a butter, sour cream and milk.

Heat a second pot over medium heat. Add prepared mashed potatoes. Whisk cream into potatoes until fully incorporated. Bring potatoes to a bubble and whisk in broth. Stir in scallions. Simmer over low heat for 5 minutes. Remove from heat, put in bowls and top with cheese.
