Bean Quesadillas

Tonight we had YUMMY quesadillas! We made homemade bean dip. (see below) We had fun dressing our quesadillas with avocado, cheese, and tomatoes. We loaded them up, folded them in half and warmed in the oven!

Bean Dip!

2 cups cooked pinto or black beans
1 T olive oil
1 T nutritional yeast
3/4 t chili powder
2 T minced cilantro or parsley

Place all ingredients into a food processor and puree until smooth.
