My friend Carissa made some yummy looking teething biscuits and I wanted to pass the recipe along!
Ingredients:
1 cup flour (gluten free if needed)
1 cup dry infant oatmeal cereal with bananas (or other flavored or
unflavored infant cereal)
3 tablespoons cooking oil (I used olive oil)
1 mashed overripe banana
ice water
Directions:
Preheat oven 425F
Mix flour and cereal.
Gradually stir in oil. Add banana and mix in. Mix a little ice water at a time (start with 1/4 cup) until dough begins to form a ball and pull away from the bowl.
Roll out to the thickness of a cracker on a floured surface and cut into desired shapes.
Bake on an ungreased cookie sheet 10-12 min. for a cracker-like cookie, or 7 minutes for a softer cookie. Cool completely.
Here are some notes from Carissa: I used olive oil instead of vegetable oil (because veg oil has soy in it) and added one banana. I am thinking of trying to use applesauce instead of oil next time. I also played around with the cooking times. 10-12 minutes made a hard cracker, 7 minutes made a softer cookie (it doesn't exactly dissolve in your mouth, but it is mashed pretty easily.
