**I am also making some special waffles this week! I am making pumpkin gluten free waffles from Karina's site.
For the pancakes and waffles I try to make a double batch and freeze them so I can cut my breakfast making time down! I try to do a breakfast with eggs on 'school' days so that preschool Veg has some extra energy! There are times when breakfast fails or we don't have enough time! Then I use the Giant Breakfast Cookies, that I have stashed in the freezer!
For lunch this week, I made Gluten Free bread from Scratch! I make other bread from scratch but this was my first gluten free loaf! I used Karina's recipe.

Veg chili (I made a triple batch to freeze) (GF)
Crispy cauliflower (GF)
Chili Dogs/Fries/Veggie (easy peasy night!) (GF)
Butternut Squash Soup (GF) (we use veg stock)
Homemade Butter Noodles and edamamne (GF)
Italian Parmesan Corn Cakes (GF)
