This was another recipe I found at Whole Foods!
1/2 large yellow onion, chopped
1 1/2 celery stalks, chopped
1/2 green bell pepper, chopped
1 carrot, sliced
3 1/4 c water
2 large potatoes, cubed
1 t Soy Sauce
1/2 t basil
1/4 t paprika
1/8 t pepper
1 can diced tomatoes
Saute onion, celery, green pepper and carrot. When veggies are tender add potatoes, soy sauce (I use Braggs) basil, paprika, pepper and water. Bring to a boil, reduce heat and cover for 30 minutes while simmering. Add tomatoes, cover and cook for another 15 minutes.
This dish was very tasty!
