This was an easy recipe I got from a "healthy meals for 4 under $15" pamphlet I found at Whole Foods! I enjoyed the lettuce part of it, however my husband preferred the bean mixture in a tortilla!
2 cans of black beans
1/2 avocado, mashed
1/2 green bell pepper, chopped
3 scallions, chopped
1/3 c chopped cilantro
2 T lime juice
1 t cumin
1/3 c salsa
8 large romaine lettuce leaves
Heat beans over med heat until warm. Mash beans and avocado. Mix all remaining ingredients, except lettuce. Place approx 1/4 cup in each lettuce leaf and roll like a tortilla.
I liked this dish hot or cold :)
