Vegetarian Stuffed Shells

My friend Amy made this recipe for us after our newest Baby Veg was born! You can find the recipe source HERE.

1 box (12 ounces) Jumbo Shells (Barilla works great!
1 (12 oz) package Morningstar Farms® Sausage Style Recipe Crumbles

2 tablespoons extra virgin olive oil
6 ounces baby spinach leaves, chopped
1 cup finely chopped onion
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/8 teaspoon ground nutmeg
1/2 teaspoon cayenne pepper
1 egg
1 cup freshly grated Parmigiano cheese

2 (26 oz) jars tomato sauce

2 cups Ricotta cheese

PREHEAT oven to 350 F.

COOK Shells according to package directions

(sprinkle salt into water before boiling);

drain, reserving 1/3 cup of the pasta cooking water.

COOK sausage style crumbles in a large skillet

over medium-high heat for 5 minutes.

ADD oil, spinach, onion, garlic, reserved pasta water;

continue cooking 10 minutes, stirring occasionally.

Remove from heat.

ADD seasonings and blend well.

STIR in egg, Ricotta and Parmigiano cheese.

POUR 1 jar of the tomato sauce into a baking dish.

FILL Shells with meat mixture; place in dish.

POUR second jar of sauce over shells

SPRINKLE mozzarella cheese over shells evenly

BAKE for 30 minutes or until shells are thoroughly heated.
