Baked Pasta with Summer Veggies

This is a yummy recipe a friend brought me when BABY Veg was just born.  YUM...

1 large onion, chopped
2 garlic cloves, chopped
1 red bell paper, sliced
1 zucchini, sliced
1 pound ziti or other pasta (I like wheat)
1/4 c Parmesan, plus other 1/2 cup
pinch of nutmeg
1 T oregano
1/2 c bread crumbs
 1/2 lb mozzarella
1 container ricotta

(may use other summer veggies as well)

Preheat oven to 425.  Lightly coat a large shallow dish with spray.  Place large pot of salted water to boil.  Toss onion, garlic, red pepper and zucchini in large bowl and season with EVOO and salt/pepper. Place veggies on baking sheet and bake 10 minutes.  While roasting... boil pasta. 
In large bowl mix ricotta, 1/4 c parm and nutmeg.  Toss pasta with ricotta mixture, veggies, oregano and mozz.  Pour into baking dish, sprinkle with remaining parm and bread crumbs and bake uncovered for 20 minutes.
