This is a fun recipe from Rachel Ray's veggie cookbook. I love it! I can be used as a side dish, meal, salad...whatever you choose! Its great to share at a picnic!
Printer Friendly Recipe3 medium tomatoes, diced
20 fresh basil leaves
1/2 pound fresh mozzarella
2 crusty chewy rolls cut up
3 TB of EVOO (extra virgin olive oil)
Combine all ingredients in large bowl and let set for 10 minutes. Juices will blend, then enjoy!
