Creamed Broccoli Soup

Broccoli Soup....creamed style!

1/2 onion, diced
1 stalk celery, diced
1 large carrot, diced
3 cups broccoli, chopped
3 cups water
1/2 cup raw cashews
1 T arrowroot
1 t basil

Put onion, celery, carrot, broccoli and water into a soup pot. Cover and bring to a boil. Then, reduce and simmer 15 minutes or until veggies are tender. Remove a few broccoli florets and set aside.

Place cashews in blender/food processor. Grind to powder. Add remaining ingredients along with half of the cooked veggie/water mixture. Puree mixture until smooth and put into a pot. Puree remaining veggie/water mixture and combine into pot. Stir in reserved florets. Reheat if needed.

Makes 4-6 yummy servings

per serving: 149 cal, 6 protein, 15 g carb, 9g fat, 4 g fiber
