Chocolate Pudding


This is an AWESOME recipe! I tried it from this book by Jerry Seinfields wife.


In a medium saucepan, melt the margarine (I prefer Earth's balance to make the dish vegan). Stir in 1 cup avocado puree, 1 cup powdered sugar, 1/2 cup cocoa powder and 1 t vanilla. Cook, mashing well with a silicone spatula to smooth out any lumps of avocado, until the mixture thickens in 3-4 minutes. Off the heat, and gradually stir in 1/4 cup cornstarch. Serve warm!
