Banana Flax Breakfast Muffins





This yummy recipe was adapted from the February 2009 issue of Vegetarian Times. The only change or recommendation I have would be not to place the banana slice on top of the muffins. Though it looks pretty, I felt the muffins didn't cook thoroughly.


Ingredients:


2 c bran cereal


1 c low fat buttermilk


1/4 c flaxseed meal


4 bananas


1 c sugar


1/4 c canola oil


1 1/2 c flour


1 t baking powder


1/2 t baking soda


1/2 t cinnamon


1/4 t nutmeg



  1. Place cereal, buttermilk and flaxseed in bowl of food processor and blend. Let stand 30 minutes or until cereal is soft. Preheat oven at 350 degrees. Coat 12 muffin pan with spray.

  2. Add bananas to cereal mixture and process until smooth. Add sugar, egg and oil, blend until smooth.

  3. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg in a bowl. Add to cereal mixture in food processor and blend.

  4. Full each muffin cup and bake for approximately 15 minutes. Check muffins often.
