Gluten Free Review: Domata Gluten Free Casein Free Flour @Domata2

 Recently, I was lucky enough to receive a complimentary sample of Domata Gluten Free Casein Free All Purpose Flour to review.  The flour was at no charge to me and the opinions are mine. :)

Domata Living Flour is Gluten Free and Casein Free.  
The flour also is noted for having a cup for cup exchange!
Ingredients: Rice Flour, Corn Starch, Tapioca Dextrin (Flour), Xanthan Gum, Rice Extract


The flour was very beautiful when I poured it from the bag, into the bowl.  Sometimes the camera has a hard time picking up all the beauty that the eyes see!  The flour was soft and fine; the flour even gave a little poof when I opened the bag.  It brought back memories of opening wheat flour bags as a kid, when I would bake cookies with my mom.  Overall, the first impression of the flour was wonderful; great smell, texture and look!

Muffins are pretty much a standard around here so we tried this flour in two muffins recipes.  The first recipe that I used the Domata Living Flour in was a Vanilla Olive Oil Muffin.  These muffins are really moist.  I felt that the flour stood up to the test of this muffin.  The flour mixed nicely in the mixing bowl and did not become stretchy and sticky.  The flour exchange of cup for cup was quite accurate in my book!  Its sure nice when you don't have to do extra math when baking.  The recipe calls for 1 cup, then you add one cup!

The next recipe I made was a pretty standard blueberry muffin recipe.  Again, I felt that the flour beat and blended well in the mixer.  It formed a nice muffin batter.  The flour allowed the batter to wrap around the blueberries to make a true blueberry muffins.  There was no sinking or floating blueberries in these muffins!

My oldest (4 years old) gave it TWO thumbs up.  That's pretty huge in his world :)
