Black Bean Brownies


I am always looking for new recipes to make and especially ones that my entire family can eat.  I was happy to try this black bean recipe from, here.  The boys LOVED IT.  I added a little powdered sugar to the top.  Its almost more like a fudge then a brownie.

BLACK BEAN BROWNIES:
1 can black beans (salt free. drained/rinsed)
3 eggs
1/3 C. melted butter, (we used 1/3 c of applesauce to make it dairy free)
1/4 C. cocoa powder
1/8 tsp salt (omit the salt if you do not have salt free beans)
2 tsp vanilla
1/2 C. + 2 Tbs sugar
1/2 C. semi-sweet chocolate chips (we used Enjoy Life Chips)

Directions:
Pre-heat oven to 350 and lightly butter an 8x8 glass baking dish.
In blender or food processor, puree beans, eggs, butter, cocoa, salt, vanilla and sugar until smooth. Stir in chocolate chips and walnuts. Pour batter into prepared baking dish. Bake 30 minutes or until center is set.
