This was a super easy recipe that I found in the May addition of All You magazine.
8 6-inch tortillas
can of black beans
1 cup corn
1 small avocado, diced
2 T cilantro (fresh)
2 T Olive Oil
2 t lime juice
crushed red pepper, season to taste
1/2 shredded cheddar
Bake tortillas in oven at 350 degrees for 6 minutes. In a bowl combine beans, corn, avocado, cilantro, oil, lime juice and pepper flakes. Toss and top on tortillas. Sprinkle with cheddar. Broil until cheese melts (1-2 minutes) Serve :)
