Creamy Black Bean Soup (Vegan)

I found this recipe in the "Quick and Easy Vegan Comfort Food" cookbook.  You can buy it on amazon by clicking  HERE.

1 small chopped tomato
1/4 cup chopped red onion
1/4 cup chopped green bell pepper
2 - 15 oz cans of black beans, drained and rinsed or you can use fresh
2 cups veggie stock
1 t vegan Worestershire sauce
1/4 c loosely packed cilantro

Bring all ingredients (except cilantro) to a boil.  Once boiling reduce to simmer and let simmer for 15 minutes.  Cool for a few minutes then blend half or all the soup in a food processor or blender.  Garnish with cilantro!
