Sweet Glazed Carrots


This recipe was also out of the Vegan Comfort Foods cookbook.  Take around 6 carrots and peel and cut length wise.  Toss with 1/4 cup agave, 1/8 t cinnamon, 1/4 cup OJ and 1 t oil.  Bake covered for 15 minutes at 350.  Then bake uncovered for additional 15 minutes.  These were SO good!
