Omelet Cakes

This simple and quick recipe was adapted from HERE. (would highly recommend that book)  I took some "fake ham" and put into a greased muffin tin.  Then I beat 4 eggs.  In the eggs I put some cheese, spinach, red pepper and onion.  Then I poured the mixture into the "fake ham"  The "fake ham" served as a muffin paper and held the egg mixture in place. Then I baked the Omelet cakes at 375 for 15 minutes.  They were GREAT!  You can add anything you want to these little guys; they sure are yummy!
