This was extremely yummy and filling! This recipe came from the "Vegetarian Mother's Cookbook".
2 t oil
2 carrots, diced
1 zucchini, diced
1 jar of pasta or one tomato basil sauce recipe
2 c cooked garbanzo beans
2 c chopped spinach
1 pound pasta of your choice
Saute carrots and zucchini. Pour your sauce over veggies, bring to boil, then simmer 10 minutes. Stir in beans (already cooked) and spinach, then heat. Toss with cooked pasta!
Easy, yummy and you can freeze the leftovers!
