Bell Pepper and Tofu Stir Fry

3/4 cup rice
8 oz tofu
2 T oil
1 red onion, peeled and cut into wedges
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 1/2 c mushrooms, chopped
4 T hoisin sauce

Cook rice and set aside. Heat wok and add 1 T of the oil. Fry the tofu remove from wok when finished. Add remaining oil and stir fry peppers and mushrooms. Return tofu and rice to wok, add hoisin sauce. Stir and serve.
