Vegetable Lentil Stew

This was a yummy yummy recipe that a friend brought me after our son was born! It is great during any season, it has become a comfort food of mine!

4 cups tomato juice
2 cans (14.5 oz) stewed tomatoes
2 cups kidney beans
2 cups garbanzo beans
2 medium carrots, diced
2 medium potatoes, diced
1 large onion, chopped
1 green pepper, chopped
1 cup lentils
2 T parsley
2 T chili powder
2 t dried basil
1 t garlic powder
1 t ground cumin
10 oz of spinach

Possible toppings:
light sour cream, plan yogurt, chopped chives

Combine first 15 ingredients. Bring to boil. Reduce heat; cover and simmer for 35-40 minutes or until lentils and veggies are done. Stir in spinach and heat. Add toppings and serve!
