2 t olive oil
yellow summer squash, chopped
green zucchini, chopped
1/2 c peas
1/2 c corn
1/2 t oregano
2 cups tomato sauce
3 cups water
1/2 white beans (cooked)
1 cup tortellini
Heat oil, saute squash and zucchini, peas and corn. Add oregano, tomato sauce and water. Cook on medium heat for 10 minutes. Add beans and tort, cook until tort is fully heated.
Serves 6
