Broccoli Rice Casserole


Broccoli Rice Casserole

This is a great recipe that was adapted from Wholefoodsmarket.com This recipe can be made ahead of time and popped in the oven later. It makes great left overs and is a hit with my entire family!

Serves 6

Ingredients:
1 c rice
1 T olive oil
1 small onion, chopped
2 1/2 c broccoli
1 can creamy mushroom soup
1 c shredded cheddar

Spray pan with olive oil cooking spray and set aside.

Cook rice according to package. While rice is cooking, preheat oven at 350 degrees. Saute onions for 5 minutes, then add broccoli and saute for another 3-4 minutes. Add cooked rice to onion/broccoli mixture. Stir in the soup and 1/2 c of cheese. Taste and adjust seasonings, adding black pepper. Transfer to prepared baking dish, sprinkle with remaining 1/2 c cheese. Bake for 1/2 hour or until cheese is browned
