Ingredients:
- 1 cup frozen tortellini
- 2 T EVOO
- 3 T Pesto
- 1 cup fresh asparagus
- 1/4 chopped bell pepper
- 1/4 cup sliced fresh carrot
- 1/4 cup fresh peas
- 1/4 cup broccoli
- 1 small tomato chopped
- 3 T Parmesan cheese
Saute all vegetables except tomatoes. Cook tortellini while sauteing veggies.
Drain tortellini and add to saute pan once veggies are cooked. Then add tomatoes, pesto and parm cheese. Toss and enjoy!
tips:
- Use flavored pesto
- Instead of using measured amounts of veggies use entire bunch of broccoli, asparagus, etc to make a large batch. It makes great leftovers.
