This is by far my favorite chili. It has a very different, sweet taste. I found this recipe on www.allrecipes.com with the title name "Chili Vegetarian Style." However, we have gone on to tweak the chili a bit.
Ingredients:
- 1 tablespoon EVOO (extra virgin olive oil)
- 1/2 cup finely onion
- 1 1/3 cups chopped bell peppers (any color)
- 6 teaspoons chili powder
- 1/2 cup raw sugar
- 3 tablespoons balsamic vinegar
- 1 (28 oz) can crushed tomatoes with thick puree
- 1 1/2 cup black beans (with liquid)
- 3 cups kidney beans (with liquid)
- 1 1/2 cup white beans (with liquid)
- 1 (10 oz) package frozen corn
- Heat Oil. Saute bell peppers, and onion.
- Add remaining ingredients and slowly bring to a boil. Cover pot and simmer for 20 minutes.
Chili is great hot, however it tastes much better when allowed to sit overnight.
Tips to make your chili even better:
- serve with sour cream (vegan, if you'd like)
- serve with cheese (dairy or vegan)
- use SPLENDA instead of raw sugar (less calories, however we prefer the benefits of "whole raw sugar")
- add a jalapeno for some kick
- use your own canned tomatoes
- use dry beans instead of canned (less salt, better taste)
- instead of using frozen corn use a corn, peas, carrot mix
