Fried Rice and Beans

This is a fun twist on fried rice. The dish carries an extra pack of protein with added kidney beans!



Ingredients:


  • onion (diced)

  • 1 cup cooked rice

  • 1 diced bell pepper

  • 2 cups cooked kidney beans

  • 1 egg

  • 1T soy sauce

  • 2 T fresh cilantro

Saute onions in wok or frying pan. Once onions are golden add bell pepper and saute 2-3 minutes. Next, add cooked kidney beans and rice. Then blend egg and soy sauce, once mixed add to wok/frying pan. Cook until egg is completely cooked, then add cilantro and serve!


Additions:



  • add garlic for some tang

  • add jalapenos for some kick

  • use red, orange or yellow bell peppers for a sweeter taste

  • use light soy sauce to cut down on sodium

  • if you don't have fresh cilantro you can use dried
