Ingredients:
- onion (diced)
- 1 cup cooked rice
- 1 diced bell pepper
- 2 cups cooked kidney beans
- 1 egg
- 1T soy sauce
- 2 T fresh cilantro
Saute onions in wok or frying pan. Once onions are golden add bell pepper and saute 2-3 minutes. Next, add cooked kidney beans and rice. Then blend egg and soy sauce, once mixed add to wok/frying pan. Cook until egg is completely cooked, then add cilantro and serve!
Additions:
- add garlic for some tang
- add jalapenos for some kick
- use red, orange or yellow bell peppers for a sweeter taste
- use light soy sauce to cut down on sodium
- if you don't have fresh cilantro you can use dried
