Corn and Black Bean Soup


This is a fun recipe that can be served chunky or pureed for a smooth soup.
Ingredients:
  • 1 T olive oil

  • 4 oz can of diced mild green chilies
  • 2 t cumin

  • 1 onion, chopped

  • 4 cups veggie stock

  • 1 cup water

  • 2 large carrots

  • 1 t oregano

  • 2 cups corn kernels
  • 5 cups cooked black beans

Saute chopped onions add chilies. Stir in cumin, stock, water, beans, oregano and carrots. Simmer 30 minutes. Stir in corn until heated, then serve.

Soup works nicely topped with sour cream or feta cheese.
