I am a pretty big fan of these muffins! They are easy to make and taste wonderful! I did try freezing them, but I felt that they dried out quite a bit. So I would recommend making them fresh each time! I found the recipe, <a href="http://www.amazon.com/Quick-Easy-Vegan-Comfort-Food/dp/1615190058/ref=sr_1_1?ie=UTF8&qid=1330370597&sr=8-1">here</a>.<br />

1/4 cup canola<br />
1 cup cornmeal<br />
1 cup flour (I use gluten free <a href="http://www.betterbatter.org/">Better Batter</a>)<br />
2 T sugar<br />
1 T plus 1 t baking powder (I use GF baking powder)<br />
3/4 t sea salt<br />
2 T white vinegar<br />
1 1/4 cup of milk (we use oat milk)<br />

Preheat oven to 425. Oil your muffin tins. Mix dry ingredients. Make a well in the middle of the dry ingredients and pour in the wet ingredients. Mix until it is not lumpy. I still read each ingredient list, but that narrowed my search time tremendously. Their website is very easy to use! I just bought several items and because I spent $50 I was able to get free ground shipping. Also, this month I saw that if you spend $40 you get a free pack of sunflower cookies!</span></span><br />

We have been searching for pretzels that are free of dairy, soy, wheat, peanut/nuts. I was very excited to try the <a href="http://www.ener-g.com/tapioca-hot-dog-buns.html">Tapioca Hot Dog Bun</a>s! We just love tofu pups and are always looking for a good bun to accompany them! This bun did the trick. It was soft and complimented the tofu pup just as a wheat bun would. I really liked that these buns has a longer shelf life. I have been thinking about making up some tubs of allergy friendly food for emergencies. These would last allot longer than other brands! Recently my family was able to try the Vegan Primal Strips. The strips are a vegan jerky that is made with soy, seitan and shittake mushrooms. The strips are all natural, non GMO, Vegan, Kosher, no cholesterol, no preservatives, no artificial colors and they are high energy and protein. Think beyond a snack! Papa Veg and I tried these strips. Papa was in love with all of them! He couldn't believe the flavor. The flavors were great in my opinion also. Very strong and very tasty! Papa Veg loved the chewy texture of the strips! I was not a fan of the chewiness, but honestly I have some texture issues! :) These were a total hit with Papa Veg and he will be buying some more very soon! <br />

Here is how I made the recipe:<br />

2 pieces of gluten free bread<br />
handful of organic spinach<br />
1 cup of fresh chickpeas or 1 can<br />
1 ripe organic avocado<br />
1 handful of cilantro<br />
squirt of lemon juice<br />
salt and pepper to season<br />
<br />
1. Mash the chickpeas and avocado together.<br />
2. Add in cilantro and lemon juice. <br />
3.Then season with salt and pepper!<br />
4. Serve on your favorite bread with your favorite toppings.<br />

Two Peas in Their Pod, indicated that it tastes great as a dip with crackers...and it DID :) YUM! It also tasted just as good the next day, though discolored from the avocado. I sure didn't mind!<br />

Today I am having one of those mushy mushy days with my boys. I just seem to love them 1,000,000,000 more times today then I did yesterday. Its amazing how your love grows and grows. There is nothing special about today; its just them. They are working on my heart today and being very sweet. I am just appreciating and enjoying each moment with them today; lots of extra cuddles. Do you ever have days like that? These are the days I keep very vivid in my memory for when their choice making is ....well...not so great :)<br />

This sweet little dirty hand reached over to mine and held my hand. For no apparent reason he grabbed my hand, then flashed me his "stinker pot" smile. He held my hand for about a minute then let go and kept eating. Lucky me for me, he left some sunbutter on my hands LOL<br />

My tip for you today is to help ease the the dishwasher routine. We are constantly washing dishes at our house. We make so much from scratch and we have many separate utensils/plates etc that are allergen free so we produce many dirty things! We love using dishwasher tabs, but it always seems like I was getting into the cabinet, below the sink, and struggling with the child proof lock. I decided to use one of my pretty ball jars and place the tabs in them. It makes the dishwasher routine so much easier! I can get them in and out of the jar even while holding a cranky toddler! :) And its safe because they sit high on the counter and the little man can't undo the latch! :) <br />

<span style="background-color: white; color: #222222; font-family: 'Irish Growler'; font-size: 13px; line-height: 18px;">In November 2011, Toddler Veg at the age of 18 months old was diagnosed with a life threatening allergy to peanuts, tree nuts, soy and dairy. I plan to use this as a diary of events...the highs and the lows. I hope that as you read this you will chime in with any opinions, ideas, concerns or encouragement! Our journey begins now....</span>

<span style="background-color: white; color: #222222; font-family: 'Irish Growler'; font-size: 13px; line-height: 18px;">We recently went to a new Allergist at Children's Hospital. The Pulminologist that we see at Children's Hospital recommended that we switch to an allergist within the hospital. I had to wait 4 months to get it, but it was worth it. This doctor was top notch! He listened to our history, asked lots of questions, reviewed previous blood allergy test results, previous skin test results and retested a few skin allergens. The doctor was very compassionate, as was the entire staff. All of Toddler Veg's allergies were confirmed except for soy and wheat. Soy has never tested positive on the skin test, but has tested slightly positive on the blood test. He often has bodily reactions to soy, however the doctor wants to try to introduce soy in small amounts. Wheat has never tested positive as an allergen; he does carry a celiac gene. His body certainly reacts to gluten in many ways, which is why he's gluten free. Often times, gluten exposure results in a rash as well as other symptoms. So we are watching carefully and he remains gluten free. He also felt that with fingers crossed, he would outgrow his Dairy allergy by age 5. At one point while we were waiting for the doctor to write up his final notes, Toddler Veg was getting quite antsy in our little room, which we had been in for 2 hours. He was getting very loud. The nurse that did the skin test popped back in with a brand new book and matchbox car. How awesome, she even stayed and played with him until the next nurse came in. The next nurse was our education nurse. Really, education? Great! She said, "I know you know how to use the Epi-Pen, but let's review it." She reviewed it as well as the doctors notes for follow up. She gave me several paper handouts which had great information on them. She reviewed the information with me; not just handing me the papers and sending me on my way. She gave me a DVD of EpiPen instructions to give to any caretakers or teachers. It was amazing and very unlike our first allergist visit. Our original DX visit with another allergist went something like this:</span><br />
<span style="background-color: white; color: #222222; font-family: 'Irish Growler'; font-size: 13px; line-height: 18px;">1. He has a peanut and tree nut allergy. Here is a RX for EPI Pen. Schedule appointment with educator at my office. Follow up in 8 weeks. Avoid peanuts and tree nuts.</span><br />
<span style="background-color: white; color: #222222; font-family: 'Irish Growler'; font-size: 13px; line-height: 18px;">2. Met with educator almost THREE weeks LATER.</span><br />
<span style="background-color: white; color: #222222; font-family: 'Irish Growler'; font-size: 13px; line-height: 18px;">3. Follow up with allergist in 8 weeks, he said "Do you need a RX for the EPI? Did I give you one last time?" WHAT!?!</span><br />

<span style="background-color: white; color: #222222; font-family: 'Irish Growler'; font-size: 13px; line-height: 18px;">So regardless it was nice to have somebody new and start fresh. I wasn't sure what I was wanting when I went into the appointment, but after it was over I was disappointed that he still had peanut/tree nut. In fact the new allergist believes that his hospitalization in November might be peanut related as well as an incident last summer in which our old pedi thought it was reflux laryngitis. So I guess I was hoping those two were really errors the first time. The likeliness of him outgrowing those are slim. </span><br />

Let me tell you that I am really not a big cereal fan, <u>until now</u>! I kid you not. I just haven't liked cereal much. I haven't been able to find something that tastes good and is good for you. I am extremely excited about this cereal! My entire family can safely eat it!<br />

My kiddos LOVED this cereal and it was quickly dubbed "brown crispies!" Both boys took to the cereal like it was candy! (allergen free, gluten free sugar free candy, of course :) ) They love to try new things and they have enjoyed this cereal many mornings. We are actually on our second box already! I picked some up at our local Whole Foods!<br />

Again, all members of the family really took to this cereal. We are excited to have a tasty cereal that is safe. We are excited to eat it for breakfast and also use it as topping on casseroles. We have been missing that extra crunch on our casseroles. So happy to find a product that is safe for the entire family that I can use again for my casseroles!<br />

This is a fun and easy recipe that you can customize to fit your needs and likes. Cook 1 cup of your favorite rice and divide among plates. In a pan saute tofu using Bragg's Amino or your favorite soy sauce. In another pan saute 1 cup carrots, 1 cup broccoli, 1 cup peas and a few diced green onions. Once veggies and tofu are sauteed, add them to the rice plate. This past weekend I was lucky enough to attend the <a href="http://nourishedfbc.com/">Nourished Conference</a>! It was a conference for bloggers who write about special diets such as gluten free, vegan, vegetarian, food allergies, etc. It was amazing to be in a room full of people who had personal food related issues...just like my family! Sometimes, I feel so alone in this journey. It was amazing and refreshing to connect with all of these wonderful people! I left the conference with a renewed sense of "I can do this!" "This" meaning everything from managing the food allergies, to creating better food, to sharing the food we eat and make! Thank you to all the presenters and all the wonderful people I met!<br />

My tip for today is invest in one of those hanging closet organizers. This has saved me a lot of time during busy mornings! Each child in my house has a special laundry day. After I wash and fold their clothes I 'restock' their organizers. I put a set of PJs in each slot as well as a pair of pants and shirt.
